Simple. Just make your favorite cookie dough and press it into a cookie sheet. Top with   your favorite treats and bake for 30min-ish.  I had to add the pretzels for salty-ness. 🙂 Enjoy!

Easter 2010

I had a hankering to make sugar cookies to our Easter celebration and didn’t have much time OR butter around. So after looking online a bit I just used Pioneer Woman’s recipe. No butter needed.

easter cookiesI think they turned out OK. I’m not a real ‘sweet treats’ person but I liked what flavor the lemon zest gave it. I would love to tell you I wanted to do this to have a fun activity for Emma or to bring smiles to others. But that would be a lie. I honestly just felt like decorating something.

I did tell you a bit ago that I was planning on making the Polish Easter cake. Still planning on it. Again- don’t have the butter but will later in the week.

Here is Emma’s outfit. She chose it out. It reminded her of Rapunzel and her purple dress.

Peanut Butter S’mores

I was talking to a friend this last week and we got on the subject of marshmellos. (It seems like it’s a subject where people feel very strongly about. Either you love them or you hate them. Was weird to me)

Anyways, she was given bags of those sugary babies by her mom and was trying to think of different things to do with them. Well…it reminded me of a recipe I did forever ago, nothing overly creative- but oh. so. comforting! Like… it’s the kind of recipe that makes me want to eat one RIGHT NOW! Good thing I don’t have graham crackers in my house right now.

Lunch

I had a friend over today for lunch. It was so rich and awesome, talking about not just friendship and family, but we also talked about what we were reading in the Bible, what we struggled/didn’t understand with what we read and where we are being challenged by God.

I love these meetings. Feels so real and fulfilling.

I made lunch, being at my house and all it was the least I could do. I made a girly lunch. Oranges and freshly cubed pineapple, with the random tortilla chips (gotta have those!). I took only 2 pictures and so that is what you’re going to get today.

OK, the first is a nice change from the regular grilled cheese. It’s super gooey and garlicky. We had it on bread that reminded me of European bread- which is the best bread in the world. This is made of, obviously yummy wanna-be European bread (which is the most important part), Mozzarella cheese and Artichoke/Chive Cream Cheese. (the kind in the tubs-pre-mixed) That’s it! Yummo.

The other starch on our menu was my Chocolate Banana bread. Family secret. Sorry, can’t give the recipe away, but I wouldn’t mind giving a free loaf to someone! With the chocolate chips inside you don”t want to defile it with butter.

I served it warm. I’m a good friend.

TRAVIS IS TAKING ME TO THE BALLET TONIGHT! Um, yeah, surprised and super excited. 🙂 I had 3 hours to prep (translation: find babysitter) But, thanks to a great friend all the details are ironed out- hooray! I am so thankful to all the friendships God has placed around me.

Food Coloring

Belle Birthday Cake

Whoever created and invented food coloring made my weekend. Emma’s cake is nothing but white cake and whipped white icing. But thanks to them, Emma was ecstatic over her Belle Princess cake.

The stand is a beautiful Polish pie dish upside down on top of a candle holder.  Try and not look at Belle’s googly eyes. They’re hypnotic.

The girls loved it and it was amazingly great, especially since it’s just a white cake. The inside was pink. Brilliant pink. Which the little princesses didn’t eat-they focused on the icing. Such good 3 year olds. 🙂

Today’s been one of those days that once I woke up I was focused and had energy to do what needed to be done. It’s amazing. Doesn’t happen that much.

Here is a little clue:

I’ve done the laundry. All of it. Hallelujah.

Made/stocked up on homemade soup. Freezing as we speak.

Made lots of chocolate/marshmelllo cookies for daddy/daughter. Froze about 30 cookie dough balls ready for a rainy day. Chocolate chip and lots of coconut. Yum.

Made a white bean garlicky spread for a girly pizza. And an olive spread. I love those little salty bites. Olives=goodness.

Cleaned out fridge.

Watched Sleeping Beauty with my princess.

Did the emails, about to edit picts of my sisters photo shoot and eating soup.

I have decided on the EASY Polish dish I will attempt. żurek

I am praying it will be eatable but we’ll see in the end. It’s a favorite of Travis’. Here’s to trying new things and hopefully being able to taste a bit of Poland soon in our home!

cocoa cake

I made a couple individualized cakes tonight for a dessert- Trav was craving something sweet- and this was small, chocolate and warm. Perfect.

You just mix all the ingredients (at end of post) together and then heat the mug/cup in the microwave for 2 min. That’s it!

I am lame for two reasons. One, I don’t like chocolate (which alienates me horribly from my sex) and secondly because I do not have the recipe near me to write here for you. But I will try my best to write it down for you from memory:

1 egg, 3 T of veggie oil, 2 T of cocoa powder, 1/4 C flour, 4 T suger and 3 T of milk. Hah! I think I that’s it!

Just mix and microwave.

I splashed a little salt on top for the sweet/salty combo. Bad idea. Don’t do it.

One batch allowed for two of these cups. Just fill 1/2-3/4 of way. Dust with any remaining cocoa powder. You can really personalize these by adding flavors, soaked raisins, Kahlua or white chocolate chips. Just a few ideas.

We went to an amazing place that is INCREDIBLE! The food is incredible and creative, the atmosphere is cool and casual and over all it is impossible to not LOVE this place.

They’re located on Congress St.

OK! Let’s get started! This first burger is the veggie burger. It is all hand formed and the BUNS ARE HOUSE MADE!!!!! This is the ‘wheat’ bun.

Doesn’t this look fantastic! My aunt who ordered it said it tasted like a falafel to her. French fries are, of course, also cut and fried at the restaurant. IN.CREDIBLE.

This was what Travis ordered: the bison burger. I barely got this picture- he gobbled it up. He said it was flavorful, juicy (compared to the usually dry bison burgers) and right now he said his mouth is watering just thinking about it. 🙂

Purple cauliflower and root beer floats

This is another very deep post. It’s all about soup. My love for it and passion to try new recipes out. I’m actually thinking about making Saturdays soup nights. 🙂

I have this compulsion to always have soup in my house. Homemade soup. ESPECIALLY in the freezer. I makes me feel reassured that there is always the soup to rely on.  Travis reminds me about it when I’m freaking out about what to make for dinner.

All that to say, I got this magazine from 2010’s Taste of home- and it’s all about soup. Different kinds, cheat tricks, all kinds of meat options, noodles, broths and other exciting options. I’ve already dove tailed many pages with the intent on trying some new recipes out. I’m really interested in trying out cold soups- for the summertime.

(I am partial to cream soups, which just so happen to be the opposite of my lovely meat eating husband. It’s like…cheesy broccoli marries chunky meaty stew)

I may be overly optimistic here, but I found this recipe for creamy cauliflower soup and I’m sure he’ll like it. Ooo, maybe I can find purple cauliflower! How pretty would that be?! …But I’m thinking I’d have to add some form of meat with it for Trav if I’m making him eat purple soup. hehe

I’m going grocery shopping this coming Tuesday and I have a list of items to buy. Excited!

So I have sad news. Trav will be gone for Valentines day in Chicago. I have a plan though to help me through it. 🙂 Stay tuned for what that looks like.

Chocolate treats

(* none of this is homemade but store bought. I just decorated a teeny tiny bit.)

I’m not sure what you’d call these. Maybe ‘super chocolate brownie fudge bites’. It’s my turn to bring the dessert in our small group and I was able to create these. I’m not a chocoholic like most females, but I’m sure they will be eaten.

I sure hope so, I won’t eat them. Is it bad to bring something you would never want to eat? I’m not too bothered by it. (I’ll bring fruit snacks in my purse for my dessert)

I’m really liking the blue platter though. Love wedding presents.

Do you like chocolate? What is your favorite combination with chocolate? Mint? Fruit? Nuts?  I, if forced to eat it, prefer it with peanut butter. And after convincing myself that I had to at least try one before allowing other to ingest them, I ate one. With peanut butter.

Mine is a grasshopper pie I had as a child. ‘Tippins’ was the name of the restaurant in Kansas City. I remember it tasting so amazing. Nothing compared since that. And probably won’t since my memory as a child can be kinda off.
