Peanut Butter Cookies

So this post will mostly be about peanut butter cookies, which Emma ate 3 of in 5 sec, but the rest will be of nothing but thoughts.

I realized that Emma might be watching too much TV (Brother Bear, Dora, Nature Babies and Barney) Which ever she wants to rotate through. I usually ether wtch one show a day but there are those days when she gets more TV time.

So I told her we were making peanut butter cookies and she said ‘no mama, chocolate cookies’ Which made me laugh.But girlfriend had to concede and go with the peanut butter-ness. What she must suffer (roll of my eyes)

OK peeps= 3 ingredients

1 C Peanut Butter, 1 C sugar, 1 egg

Apple Pork Steaks

Easy amazing meal that both Trav AND Emma loved. It’s just any cut pork chop (2) you like with chopped apple (2), half a yellow onion, carrots (2) and spices. The spices are just pepper, salt and then cinnamon.

Trust me. It makes all things heavenly. MAGGI. It’s a salty liquid seasoning that is UNBELIEVABLE! I grew up with it and will force, preasure and do make others try it. MAGGI. It is amazing and always changes their lives. (for the good of course! lol) Thank goodness they have it in Poland!

Chocolate Banana Bundt

I have an obsession with collecting bundt pans. LOVE. THEM. I am fully satisfied imagining me 50 years from now with a kitchen with bundt pans hanging on the walls. I’d ask you over for tea/coffee and we’d partake of an amazing bundt cake.

I am also obsessed with reading/writing blogs. And if you’re like me and like both bundt cakes AND blogging CHECK THIS GIRL OUT. Well, I don’t mean in like…. a ooo lala way. But check her blog out. Man, people- grow up. 😉

She’s doing a count down until November 15 which is ‘Officially Bundt Cake Day’. Yes people. That is why I love this country. They make crazy holidays like bundt cake day. So sweet…

So anyways, this chick is literally making a new bundt cakes EVERYDAY until November 15th. Yeah. Crazy. Crazy cool! So since I had it on my ‘to do list’ I decided to make my banana bread a little more sultry and add chocolate chips to the meld. Heck, throw it into a fancy bundt pan and you feel so good about yourself that you won’t clean the rest of the day. Enjoy. Oh and recipe, not going to give it. It’s my mothers and I promised I wouldn’t give it to anyone…but I am partial to bribing.

(Do you see how the top of my cake is kinda patch-worked together? Just a little bit , but apparently I didn’t grease it enough. Does this happen to you? I get so frustrated when it comes out like that. Oh well, at least it tastes great.)

Chicken Noodle Cassarole

This was chosen by Amy. Such a comforting food with some of the colder winds wiping up here. This was close to a recipe that I grew up with and was planning on making anyways so it was nice, convenient and familiar. Oh yeah. So the only changes I made to the recipe was the veggies. I put in broccoli instead of green peppers. I have a mental block with green peppers- well with all peppers I guess. I just think that soy sauce has to go in the dish. No choice. Peppers are only in Asian dishes. How horrible is that?

If you have any good pepper recipes send them my way. I need to branch out of my limited scope of the veggie. 🙂

Thelast change I did was with the noodles. I just made it with the last remaining noodles I had. I made me feel spontaneous and silly. I mean who makes meals with different noodles? I usually don’t.  Travis didn’t notice or comment. But he did eat it so that was good. hehe

Artichoke and Tomato Pasta

This Monday was my choice (yay!) and I chose Artichoke and Tomato Pasta. So worth it and super easy to make again. Simple meal, but tons of flavor. This is a simple meal because you use canned veggies! Bless canned artichokes and tomatoes…they make our lives SO much easier.

Ree asks specifically for non marinated artichokes. I thus went to the store looked specifically for those and bought the wrong ones. As I was struggling, for about 10-15min, to open the jars I read the small print. They were marinaded with herbs in oil. Perfect. Just what I didn’t want. But I used them anyways, and although they smelled horrid I kept cooking and praying it wold turn out. Either they are smelly veggies when marinated in oil or God made it turn out well. I’m betting on the second. He’s nice like that. But this is also my first artichoke meal. Newbie.

The only thing I changed purposely was the noodles. I like angel hair best, but with something in which the sauce is a highlight- I had to have shell noodles. To better hold the sauce my darlings.

I noticed that the sauce is way thicker today as left overs and I’m looking forward to that. You could so easily add chicken to this dish for your meal ravenous husband. Here’s the recipe. Your so welcome.

Baking Mania

A friend let me borrow her measuring cups (because we don’t have any yet- moving adventures) and I’ve been wanting to do some fall baking. So I’m taking today and tomorrow to bake my heart out and freeze as much as I can. I’m making 2 loaves of banana bread, tons of cookies, cinnamon rolls and muffins.

Crispy Yogurt Chicken

A group of us has decided to do Pioneer Woman’s Recipes every Monday. Recipes from her book/web site. I’m looking forward to seeing all the different kinds of ways people do the same recipe. This was chosen by Melissa over at Purple and Pink. 🙂

Here’s the link! I didn’t have all the ingredients like…the main ones. I substituted the plain yogurt for light mayo and panko for bread crumbs. I really wish I had the panko cause I love all things crispy. But still, it was very tasty and Emma ate tons. 🙂 Great pick Melissa!
