Messy Chicken

Messychicken

I was looking through Pinterest and saw some meal ideas for making ahead and I looked in my fridge to see what I cold make in bulk to eat and freeze. And came up with this. No surprise it’s Mexican. My favorite. 🙂

I can see different variations depending on what’s in the kitchen but this batch is made of:

1/2 Red Bell Pepper

1/2 Green Bell Pepper

1/2 Yellow Bell Pepper

2 Sm. Yellow Onions

5 coves of Garlic (Yes, I love garlic)

2C Shredded Chicken

1-2C Cooked Rice

1/2 Package of Taco Seasoning

I think next time I’ll substitute black beans for the rice. Enjoy!

Chicken Noodle Cassarole

This was chosen by Amy. Such a comforting food with some of the colder winds wiping up here. This was close to a recipe that I grew up with and was planning on making anyways so it was nice, convenient and familiar. Oh yeah. So the only changes I made to the recipe was the veggies. I put in broccoli instead of green peppers. I have a mental block with green peppers- well with all peppers I guess. I just think that soy sauce has to go in the dish. No choice. Peppers are only in Asian dishes. How horrible is that?

If you have any good pepper recipes send them my way. I need to branch out of my limited scope of the veggie. 🙂

Thelast change I did was with the noodles. I just made it with the last remaining noodles I had. I made me feel spontaneous and silly. I mean who makes meals with different noodles? I usually don’t.  Travis didn’t notice or comment. But he did eat it so that was good. hehe

Thanks Amy for choosing this dish. And thank you Pioneer Woman for the cookbook. It’s yummy so far.

Crispy Yogurt Chicken

A group of us has decided to do Pioneer Woman’s Recipes every Monday. Recipes from her book/web site. I’m looking forward to seeing all the different kinds of ways people do the same recipe. This was chosen by Melissa over at Purple and Pink. 🙂

Here’s the link! I didn’t have all the ingredients like…the main ones. I substituted the plain yogurt for light mayo and panko for bread crumbs. I really wish I had the panko cause I love all things crispy. But still, it was very tasty and Emma ate tons. 🙂 Great pick Melissa!
