I’ve been looking for a great pancake recipe that I can make in Poland which doesn’t require buttermilk. Not because I can’t find it there or even make it there…I’m just lazy. lol Honestly. I also want something that’s a bit healthier. However if you find those recipes, most are complicated or doesn’t taste how you hope.
Well, to this date, this is the best one I’ve found. And it’s already made my paper recipe book so you know it’s good. Super good and straightforward. The hardest part is finding a syrup now that doesn’t contain crazy sugar. Did I mention this was a sugar free pancake recipe? 🙂 I’m interested in making coconut whipped cream with fresh berries. I know. Yum right?!
Here is the recipe. Enjoy!
1 3/4C Flour
1T Baking Powder
1 1/2C Milk
2 lrg Eggs
3T Veg. Oil
Mix all the dry ingredients first then add wet. Remember to not over mix.
This is for plain simple pancakes. Some fun flavor ideas: Ginger and Cinnamon Spices, Berries, 1/4C Pumpkin Puree, 1/4C Sweet Potato Puree, Chocolate Chips, swirl in a mix of melted butter/brown sugar/cinnamon, 1/2C oatmeal, etc. The sky’s the limit. 🙂
I don’t make many things with pumpkin although it’s one of my favorite vegetables. I had two unopened huge cans of pure pumpkin puree with glorious plans of making yummy things until it ran out. They’ve been sitting and sitting…waiting to be used. I finally just thought, ‘what the heck, if I ruin a recipe then I ruin it. At least I would have tried it’ and so here is my own vegan pumpkin pancakes.
They are not as fluffy as some recipes, the batter is on the thin side. But you could put in chocolate (dairy/nondairy) chips for a yummy creamy-ness. Mmmmm. Enjoy!

Vegan Pumpkin Pancakes
1 1/2C Nondairy milk
2T Pumpkin Puree
1 1/2 C Flour
1t Baking Powder
The weekend means Rainbow pancakes.
Just because it was rainy.
Just because she looked so darn cute in her new dress.
Just because I know she loves chocolate.
I made Chocolate Rainbow pancakes.
She always has candles in he pancakes. (and you can’t see it but her pancakes were pink and purple)
It was made from scratch and of whole wheat flour. Couldn’t taste it and I felt smug.
This next Polish recipe is from our friends who stayed with us for a while. ( Hi guys!)
This is super great and simple too. I think the thing that took the longest was peeling the apples. I used this recipe for the cake batter and placed apple slices in the pan.
I added cinnamon to add just a bit more flavor. But next time I’m going to sprinkle them with powdered sugar first. Didn’t have a chance this time- they were all eaten too fast. 🙂

I made pancake animals for breakfast a couple days ago and am happy to say a couple turned out OK. 🙂
I am happy to say I can check this off my summer list. Emma is still asking for animals pancakes when I make them so they will be making regular appearances.

Today is a day for dipping pretzels into Nutella. It’s a day for drinking hot tea that almost burns my tongue.
It’s a day to be thankful for the amazing man God put into my life.
It’s a day of me praying to God, ‘pleeeeease let Emma take a nap!’ (Right now she’s been in her bed for 1 hr. ugh guess it will be an early bedtime)
It’s a day for Emma to learn her shapes and focus on the letter E.
It’s a day that will end in pj’s, slippers and tutus. Homemade chocolate chip pancakes. Lots of syrup. Peanut butter. And eggs on the side.

Blackberry Pancakes beat blueberry and strawberry. Hands down. I’m looking forward to trying peach pancakes. Mmmm.
What a typical Monday looks like in our house.
On a typical Monday and most days you will find me making either crepes or pancakes. (different verities of course) Emma and I both love them.
I turned to clean her tray from breakfast and hear this ‘whosh’ sound…oh no. As I walk into the living room I see Emma has emptied the ENTIRE box of Goldfish crackers. hehe Life is too short to get mad over things like this. I took some pictures and we learned how to clean up.
Emma is a snuggler, most of the time. She loves, and I mean loves, Chloe. And Chloe likes her, but I think that’s because Emma feeds her human food- just a hypothesis. Anyhoo, I was looking on Facebook in the morning and looked up to find this. How cute! (notice the pancake still in her hands) I didn’t remember to turn on the flash though- my bad.
I can never ever get on the computer and not have Chloe want to all of a sudden snuggle with me. It makes it impossible to type. She can’t be comfortable with me typing and moving- but there she stays. Sweet stubborn thing.
Any time I take photos of the cats, Emma comes up and fake smiles wanting me to take some of her…I love that about her. That’s about it. I didn’t take any photos of last night, but I went to a friends house to watch MNF and Trav stayed home and chilled with Emma. Have a great Tuesday.
