I actually made these with the hope that the girls will wake up in the morning, eat these and will watch Netflix together giving me an extra 30 min-1hr extra so I can ‘sleep in’ to 7:30am. I wonder how ridiculous that hope is…we’ll see.
This is another recipe that I thought I could make in advance, girls would like it and I could make it as healthy as I want. Perfect. Turns out I didn’t have any bananas so I just winged my own recipe, making up the measurements as I went. And surprisingly they turned out great. Not dense, a bit more cake like and not too sweet which is nice.
I was lazy and just wrote down the measurements and took a picture. 🙂
With the latest current events still fresh in my mind, posting about something as silly as sugar cookies seems almost shallow. Yet, what I want to celebrate is the memory, quality time and smiles we shared while making them. I don’t want to take any moment for granted with her. So precious.
3 1/4C Flour
1 1/2t Baking Powder
1C Butter (softened)
2 1/2T Vanilla
In medium mixing bowl combine flour, baking powder, and salt; set aside. In large mixing bowl beat butter on medium to high speed for 30 seconds. Add sugar. Beat until combined, scraping sides of bowl as necessary. Beat in egg, milk, vanilla, and lemon peel. Beat in as much flour as you can with the mixer. Stir in any remaining flour. Divide dough in half. Cover and chill 1 hour or until easy to handle.
Preheat oven to 375 degrees F. Roll half the dough at a time, between sheets of waxed paper, to 1/4-inch thickness, sprinkling bottom sheet of waxed paper with flour if cookie dough sticks. Cut with desired cutters (if dough becomes too soft, return to refrigerator). Place 1 inch apart on ungreased cookie sheets. Bake for 8 to 10 minutes or until edges are firm and bottoms are barely light brown. Transfer to wire rack to cool. Makes about 2-1/2 dozen (2-1/2- to 3-1/2-inch) cookies
I had a hankering to make sugar cookies to our Easter celebration and didn’t have much time OR butter around. So after looking online a bit I just used Pioneer Woman’s recipe. No butter needed.
I think they turned out OK. I’m not a real ‘sweet treats’ person but I liked what flavor the lemon zest gave it. I would love to tell you I wanted to do this to have a fun activity for Emma or to bring smiles to others. But that would be a lie. I honestly just felt like decorating something.
I did tell you a bit ago that I was planning on making the Polish Easter cake. Still planning on it. Again- don’t have the butter but will later in the week.
Here is Emma’s outfit. She chose it out. It reminded her of Rapunzel and her purple dress.

So this post will mostly be about peanut butter cookies, which Emma ate 3 of in 5 sec, but the rest will be of nothing but thoughts.
I realized that Emma might be watching too much TV (Brother Bear, Dora, Nature Babies and Barney) Which ever she wants to rotate through. I usually ether wtch one show a day but there are those days when she gets more TV time.
So I told her we were making peanut butter cookies and she said ‘no mama, chocolate cookies’ Which made me laugh.But girlfriend had to concede and go with the peanut butter-ness. What she must suffer (roll of my eyes)
OK peeps= 3 ingredients
1 C Peanut Butter, 1 C sugar, 1 egg

A friend let me borrow her measuring cups (because we don’t have any yet- moving adventures) and I’ve been wanting to do some fall baking. So I’m taking today and tomorrow to bake my heart out and freeze as much as I can. I’m making 2 loaves of banana bread, tons of cookies, cinnamon rolls and muffins.
Here’s my families banana bread. I did not taint it by putting in nuts. I don’t like nuts in my baked goods- it’s a personal thing.
Next I made the cookies. Well, still in progress, Emma is watching ‘Barney Goes to the Zoo’ while I take pictures and blog. Man he’s annoying…
My mom has a secret recipe that I will never give away. I had to promise her my first child if I gave it away. Now that I think about it she would be just fine getting Emma…too bad mom- she’s mine. 🙂

I know I told a couple of you that I was going to make homemade pretzels. Sorry, my brown sugar is gone and so hopefully this week sometime I’ll do it. If not, for sure next week. I’ll also post the recipe here too- it’s really simple. Well, it seems that I blog a lot about food. Huh, I guess it’s just an avenue for my creativity. I would love more fabric, crystals, card stock, stamps and spray paint. But as it is, we will always need food! So I’m able to have fun in the kitchen and spread the love Internet style.
I needed to make cookies for Trav’s lunches and I’m always trying to come up with fun little desserts. So, voila! This is the best of both worlds. This is obviously so simple a child could do it. (hint, hint for all you mommies and aunties- fun project for a rainy day!) Right now they’re in my freezer hardening up. I think we’ll add them to tomorrow’s dinner plan. Enjoy!
